Regional Direction for Communities promotes training course with Azorean Chef residing in the USA
The Government of the Azores, through the Regional Directorate for Communities, promotes in partnership with the Tourism and Hotel School (EFTH) a training course with Chef Manuel Azevedo, a Portuguese cuisine specialist living in the USA.
The training course will take in Ponta Delgada from November 11 to 15. This initiative is intended to make EFTH students acquainted with the work carried out by Manuel Azevedo throughout his career and his unique style that combines U.S. ingredients with traditional Portuguese flavours, many of which from the Azores.
A native of São Jorge, Manuel Azevedo emigrated to the United States in 1968. He is currently one of the most acclaimed chefs in this country, particularly with regard to Portuguese cuisine, which is featured at his restaurant in Sonoma, California.
In 2012, Manuel Azevedo published the cookbook "LaSalette Restaurant Cookbook: Cozinha Nova Portuguesa" (LaSalette Restaurant Cookbook: New Portuguese Cuisine). His cookbook features some of the most popular dishes of his restaurant adapted to home kitchens, including "Morcela com Ananás" (Blood Sausage with Pineapple) and "Sopas do Espírito Santo" (meat broth served with meat and vegetables).
3rd year students from the Catering Course - Cookery/Pastry at EFTH will have the opportunity of learning with Manuel Azevedo and taking part in the preparation of some of the dishes that have made this Chef a reference in Luso-American cuisine.
At the end of this training course, November 14, Manuel Azevedo and the participants will present the results of this initiative to the school community. The presentation session will be held at the Anfiteatro Restaurant at 12:30 PM.
